Herbal Popsicles

ooking for another tasty way to incorporate herbs into you and your family's diet? There is no better way to cool off on these hot summer days than with a delicious herbal popsicle.  You can incorporate any of your favorite herbs into these treats or design a popsicle for a specific purpose, such as Immune Boosting or a Vitamin C pop. Below I have some tasty recipes that I've been trying out but they are simply a jumping off point. The sky is the limit! Enjoy.

Hibiscus High C Popsicles

1 cup of coconut milk
1 cup frozen berries (your choice)

1 T honey
1 cup of filtered water
2 T of herbal blend (equal parts Hibiscus, Rosehips, & Elderberries)
OR try 2 T of my Hibiscus High C Tea Blend (Hibiscus, Rosehips, Lemongrass, & Spearmint)

1. Bring water to boil and remove from heat. Add herbs to pot and allow to steep covered for 15-20 minutes. Strain herbs out using a small strainer or cheesecloth.
2. In a blender, blend coconut milk, berries, honey, and tea blend.  Taste for sweetness, and feel free to add more honey if needed. 
3. Pour mixture into your reusable popsicle molds and place in freezer. 

Other flavors to try: Peppermint & Cucumber, Chamomile Lavender Honey, the list goes on...
