Shrimp Creole

8-10 slices of bacon
1 medium onion, chopped
2-3 cloves garlic, minced
2 stalks of celery, chopped
1 medium red bell pepper, chopped
2 peeled tomatoes
15 oz can of tomato sauce or diced tomatoes
1 T honey
2-3 tsp of cajun spice mix
1/2 tsp thyme

1 1/2 lb peeled, raw shrimp

1) Fry bacon. Crumble and set aside.
2) In bacon grease, saute onion. Add garlic, celery, tomatoes, pepper and spices. Simmer for 20 minutes or so, allowing tomatoes to cook down. 
3) Add shrimp and simmer until they turn pink and are done cooking.  Crumble bacon on top and serve over white or brown rice.

Cajun Spice Mix
(Makes a little over 1 1/2 cups)
1/2 c paprika
1/3 c sea salt
1/4 c garlic powder
2 T black pepper
2 T onion powder
1 T cayenne
2 T oregano
1 T thyme
